I realize these are not actual recipes. I like to think of them as serving suggestions. If you need specific measurement instructions to make a s’more than you need more help than I can give you. . .no offense, of course.
Last weekend Tim and I headed out to camp again with a group of great friends. Or ‘glamp’ (Google it) as I like to call it because unlike the last time we camped, this time we were at a campground with showers and running water. VERY swanky! Read the rest of this entry
Lemon Ginger Thyme Bundt Cake
I’ve been making a list in my head of all the “summer” things I still need/want to do. The list is long. The summer is rapidly coming to a close. I can tell because all the school supplies are in the stores, Halloween is a prevalent topic on Pinterest and I am having a hard time finding warm enough weather to don my bathing suit.
This weather might not bode well for our next camping trip in a couple of days. It’s still too chilly for my taste. Although, as long as the rain holds off I suppose I’m ok with it. (and we’re fancy camping this weekend with electricity and running water so we can use our tiny space heater in the tent.) We’ll be spending our weekend mostly eating and drinking with the friends we’re camping with so how bad can it be. I’ll put on a sweatshirt and suck it up. Read the rest of this entry
Hummingbird Cake with Italian Buttercream
I have very few pictures of this cake. I guess I was just so excited about it that I forgot to whip out the camera.
And in case you’re concerned, no hummingbirds were harmed in the making of this cake. Although, maybe this cake is the reason Tim’s face was attacked by a hummingbird last week! A hummingbird buzzed in like a giant killer bumblebee and ran right into Tim’s face. He said his face was even wet with bird spit afterwards. (Do birds have spit?) I’m not sure if it was an accidental flight miscalculation or just a violent attack by a rogue bird. Either way, Tim moved pretty fast in reaction to the “attack’. Quite funny, really!
Chocolate Macaroons
I’ve got a pretty simple cookie for you today. Easy to make and easy to eat. And because of my love of coconut I generally have all these ingredients on hand when the mood strikes.
Of course, the problem with “easy-to-eat” baked goods in my world is that I can easily sit and eat MANY at a time. Without blinking. And the chewy texture of these makes them all the more appealing to me. Read the rest of this entry
Easy Chocolate Cake with Lime Buttercream
Pina Colada Popsicles
Banana Cupcakes with Brown Buttercream
I know, I know! It’s been a few weeks. What can I say? I was enjoying the spring weather, taking a quick trip to Orlando, and celebrating a lot of birthdays!
From about the end of March through the beginning of July there are A LOT of birthdays in my world. Friends and family. Kids and adults. I did a little baking for the occasions. Including these cupcakes for the April birthday of my Uncle.
Scotcharoos
We are exhausted! Tim and I had our first weekend off together in 3 weeks and we spent it walking, getting sunburned, doing yard work, cleaning the garage, etc. Yes, it’s officially summer. I think we skipped spring. And I am pooped already.
Oh and I also took a few minutes to bake on Saturday and it was a disaster. Read the rest of this entry
