In celebration of my wedding anniversary today, I made Tim this cake.
It’s a favorite of his and he’s a fantastic husband so he deserves some cake.
I have very few pictures of this cake. I guess I was just so excited about it that I forgot to whip out the camera.And in case you’re concerned, no hummingbirds were harmed in the making of this cake. Although, maybe this cake is the reason Tim’s face was attacked by a hummingbird last week! A hummingbird buzzed in like a giant killer bumblebee and ran right into Tim’s face. He said his face was even wet with bird spit afterwards. (Do birds have spit?) I’m not sure if it was an accidental flight miscalculation or just a violent attack by a rogue bird. Either way, Tim moved pretty fast in reaction to the “attack’. Quite funny, really!
Ever had a Chia Pet? I think I had a Scooby Doo Chia Pet years and years ago. At the time I never would have assumed the seed filled gel I was spreading on the tetta cotta character was good to eat! I just knew it grew a very nice grassy Scooby head.
Chia may be a bit of an acquired taste, although I liked chia seeds from the beginning. I toss it in yogurt, oatmeal, smoothies, etc.
Back to oatmeal today. I do love the oats.
When I made this the first time it was not delicious. I had the wrong proportion or something and I was not impressed. I tweaked the recipe and came up with this version which was yummy so I thought I would share it with you.
