Peanut butter with my s’mores? Yes, Please. In cookie bar form? Abso-freaking-lutely! Between all our hiking, backpacking. camping, paddleboarding & hammock drinking adventures this summer I didn’t spend much time baking. I know, it’s shocking. Who knew I was more of an outdoors girl? It would have been a great summer for baking because the weather never got very hot so having the oven on wouldn’t have been torture. Pumpkin Spice Crispy Treats
I’m continuing on with my October love affair with pumpkin spice. This also satisfies Tim’s love of marshmallow crispy treats.
These are easy and fun and yummy. Most everyone I know likes marshmallow crispy treats. Except maybe for the one marshmallow hater that I know. You know who you are! And even she might like these.

S’more Cookies
This weekend Tim and I rode our bikes about 30 miles. Not all in the same day, but half Saturday and half Sunday. The weather was lovely and finally warm again! Thank goodness, cause I was scared winter was bearing down on us already. All that riding gives me license to do things like sit around and eat Chinese take out or have pancakes!
Our Sunday ride was planned out to culminate in breakfast at our halfway point. We headed into an area of town called “Old Town” with a location in mind. Turns out they roll the sidewalks up in Old Town on Sundays. Only one place was open and although it is delicious, they also have huge waits to get a table most mornings and we were looking for a little bit more instant gratification so we headed into downtown looking for an alternative. Little did we know we were doomed to wait.

Iced Whole Wheat Sugar Cookie Bars for St. Patty’s Day
These have NOTHING to do with St. P Day. They are not Irish. They do not contain potato. (or cabbage)
But. . .they are green. Good enough for me. Sometimes simplicity is best! Besides, imagine how well a nice soft sugar cookie would absorb all that green beer you’re going to drink.
