Where has my summer gone? I can’t believe it’s August. I’ve barely even shared with you this summer. Recipes or stories about how I am an outdoors woman now!It’s true. I’ve lived in the woods and survived without running/potable water, refrigeration, toilets, etc. Just us, some dehydrated food, a water filter and a shovel. Ok, and a few comforts such as a tent, hammock, comfy little chairs and some wine. Of course, I didn’t have popsicles but I survived with out homemade treats for 4 whole days. Hummingbird Cake with Italian Buttercream
I have very few pictures of this cake. I guess I was just so excited about it that I forgot to whip out the camera.And in case you’re concerned, no hummingbirds were harmed in the making of this cake. Although, maybe this cake is the reason Tim’s face was attacked by a hummingbird last week! A hummingbird buzzed in like a giant killer bumblebee and ran right into Tim’s face. He said his face was even wet with bird spit afterwards. (Do birds have spit?) I’m not sure if it was an accidental flight miscalculation or just a violent attack by a rogue bird. Either way, Tim moved pretty fast in reaction to the “attack’. Quite funny, really!
Banana Cupcakes with Brown Buttercream
I know, I know! It’s been a few weeks. What can I say? I was enjoying the spring weather, taking a quick trip to Orlando, and celebrating a lot of birthdays!
From about the end of March through the beginning of July there are A LOT of birthdays in my world. Friends and family. Kids and adults. I did a little baking for the occasions. Including these cupcakes for the April birthday of my Uncle.

Several things happened last week. My other dog had surgery, I went to a drive in movie, and I made muffins. Exciting life, eh?

Baked Banana Pineapple Oatmeal
Back to oatmeal today. I do love the oats.
When I made this the first time it was not delicious. I had the wrong proportion or something and I was not impressed. I tweaked the recipe and came up with this version which was yummy so I thought I would share it with you.
