I guess I’ve dragged my feet long enough on fall baking. I miss fresh tomatoes, basil, cucumbers & zucchini already. And warmth, I miss warmth. I’ve already seen the first flurries of snow here in MI and I am not impressed.I do love fall squash though. A new phenomenon for me and now that I love it, I love it all the way. Where has my summer gone? I can’t believe it’s August. I’ve barely even shared with you this summer. Recipes or stories about how I am an outdoors woman now!It’s true. I’ve lived in the woods and survived without running/potable water, refrigeration, toilets, etc. Just us, some dehydrated food, a water filter and a shovel. Oatmeal Cinnamon Buttermilk Waffles
I’m not sure why but, this time of year I really, really need breakfast food. Need it. Hearty stuff, too. Not just the fruit and yogurt I eat the rest of the year but waffles and omelets and potatoes and oatmeal. Stuff that weighs you down and fills you up all day.So this weekend we had our second annual waffle breakfast. Very fun and an easy way to entertain. Just borrow a couple of extra waffle makers from party guests and set out some waffle batter and imaginative topping. The rest takes care of itself. Peach Fritters
OK, it’s a little past peach season. Not that you can’t still get some good peaches but they won’t be at the peak of their sweetness. Fortunately, these are fried (or maybe unfortunately for my jeans) and the peaches will taste delicious in this yummy fritter batter regardless of the lateness of the season.It’s sort of an unspoken quest for Tim and I to try to find the most delicious apple fritter possible. Tim has a ‘thing’ for the apple fritter and I may lean toward other morning pastries but I still can appreciate a crispy bite of fritter perfection. Fyi, in case you ever have the urge to bring me breakfast – I lean toward almond filled croissants, cream filled long johns, coconut covered cake donuts and plain old raised glazed donuts.
