Peanut Butter Energy Bites

So, Tim and I are soon going to be hiking/backpacking/camping experts. Actually with the amount of reading Tim has been doing I’m pretty sure he already is an expert even though we haven’t had a chance to practice much.Peanut Butter Energy Bites

We live in the cold north and winter/snow camping is not yet on my radar as a “fun” thing to do. Until spring rolls around, reading about it and trying out hiker friendly meals is as good as it gets.

Hummingbird Cake with Italian Buttercream

I have very few pictures of this cake. I guess I was just so excited about it that I forgot to whip out the camera.Hummingbird Cake! And in case you’re concerned, no hummingbirds were harmed in the making of this cake. Although, maybe this cake is the reason Tim’s face was attacked by a hummingbird last week! A hummingbird buzzed in like a giant killer bumblebee and ran right into Tim’s face. He said his face was even wet with bird spit afterwards. (Do birds have spit?) I’m not sure if it was an accidental flight miscalculation or just a violent attack by a rogue bird. Either way, Tim moved pretty fast in reaction to the “attack’. Quite funny, really!

Chocolate Macaroons

I’ve got a pretty simple cookie for you today. Easy to make and easy to eat. And because of my love of coconut I generally have all these ingredients on hand when the mood strikes.Chocolate MacaroonOf course, the problem with “easy-to-eat” baked goods in my world is that I can easily sit and eat MANY at a time. Without blinking. And the chewy texture of these makes them all the more appealing to me.  Read the rest of this entry

Granola Bars

Happy Labor Day! We partied yesterday. . today I lay low! Maybe make some more of these!

Remember how I told you about my granola addiction? This falls into the same category. It’s sticky, chewy granola. But in bar form.

I’m pretty sure these are a little like crack.  (Not that I’d know what that is like, of course!) You know. .they’re addicting. I feel a little like a dealer handing these out. Like a little free sample of granola bar to get ya hooked and then you’ll want more and more and I’ll start charging you more and more! BWA HA HA HA!

Diabolical, no?

Tropical Chia Pudding

Ever had a Chia Pet? I think I had a Scooby Doo Chia Pet years and years ago. At the time I never would have assumed the seed filled gel I was spreading on the tetta cotta character was good to eat! I just knew it grew a very nice grassy Scooby head.

Chia may be a bit of an acquired taste, although I liked chia seeds from the beginning. I toss it in yogurt, oatmeal, smoothies, etc.
