Sugar Free Chocolate Cheesecake

Confession time. I don’t like cheesecake. It’s yucky.

Let that sink in a minute.

I know, I know. The horror! I just find it too. . . .rich, cream cheesy, dense, cloying. I could go on. Something about cream cheese in sweet stuff that I can’t get behind. Occasionally I run into a cream cheesy dessert or pastry that’s edible but usually not. (Actually there is one cheesecake I did like and I had it years ago. It was a pumpkin version that my girlfriend, R, made. And surprisingly, she doesn’t like cheesecake either!)

Chocolate Angel Food Cake

Happy fourth of July week. Because the holiday falls on a Wednesday it does nothing more than break up my week in an odd way. It’s always nicer for it to be on a Monday or Friday. Built in 3 day weekend.

Cupcakes are fun for a holiday and these could be dressed up with red, white and blue wrappers or sprinkles to make them festive. Clearly I made these a few weeks back, as my yard appears green and lush. Right now it is mostly brown and crispy due to a large lack of rain.

Mini Snickers Pies

A month ago I got a cute little Wilton mini pie pan. On clearance, of course. If you know me, you know I refuse to spend money on that sort of thing unless there is a good reason or a good clearance.

I realize that this sort of pan will not be used enough to blink at. I’m hopeful that I will find lots of reasons to use it and it will be fabulous. BUT, I am realistic enough to know that it will probably become one more kitchen gadget that I don’t have room for and it will live in the basement. It will end up a waste of money. And possibly a Goodwill donation two years from now.

Strawberry Covered Chocolate Cupcakes

How about some pretty, spring-y cupcakes. All my flowers are blooming so it seems appropriate! These would be perfect for a spring birthday party.

Don’t be intimidated by my awesome flowers and bees. I can be sort of awesome. If you can’t fathom taking the time to decorate your cupcakes like these, they will taste just as good if you just slather the icing on with a spatula. Or just eat spoonfuls of the icing and forget about the cake all together.

Rainbow Cookies

This one is for my friend, Brenda, who told me she can not find these at any bakery near her and she misses them. They are a favorite of hers and this is my first go at them.

These are an Italian cookie and therefore are supposed to be colored like the Italian flag. I am not Italian. I was thinking these would be fun to do in different colors sometime. Like 3 different shades of blue or pink and red. Purists may disagree.

Chocolate Spice Valentine’s Day Decorated Cookies

Ok. . .a tiny, chocolatey, Valentine’s break from breakfast. . .although these would make a wonderful breakfast. These cookies are fantastic.

Once you add the frosting they are near to perfection. Iced sugar cookies are nice. . iced chocolate sugar cookies are THE BEST.

Valentine’s Chocolate Cinnamon Almond Biscotti

Guess what? You’ve got less than a week to Valentine’s Day. (And these biscotti will keep until then even if you make them right this second. They are like the cracker of the cookie world.)

I used to work in the holiday/gift “industry”.  V-day was our biggest holiday and by now I would have been up to my eyeballs in pink and red hearts, ribbons, vases, etc. I do not miss the frenzy. Working all night, being too busy to even drink a few gulps of water, fielding last minute dudes who forgot the holiday until that very second, and once I was even seriously hard-core cussed out by some lady who was pissed I could not break a $100 bill for a $6 sale. People are nuts!

For years it was an unheard of luxury for me to actually celebrate vday. I was too exhausted, hungry, annoyed by crazy people, etc.

These days I get to celebrate as I choose. As leisurely as I want. It might mean making chocolate biscotti to share with a loved one. (It always means making a chocolate cake for my dad.)
