Coconut Fudgsicles

Just a quick sweet treat for you today. Fudgsicles! Coconut fudgsicles to be exact.

I am a big fan of coconut and chocolate together.

These are particularly dark because I used ‘jet black cocoa powder’ that a friend got for me. It made for very dark fudgsicles. Regular cocoa powder works just as well though so don’t be scared.

And if you are not a fan of coconut you can leave it out and change the coconut extract to vanilla extract. They will be just as delicious. I made them that way a million times last summer.

Then I had a lightbulb come on in my foodie head and I thought, “Coconut”!! Genius.

I’m sure that other add-ins would also be fantastic. How about mint extract and crushed mint candies for a cool christmas treat? Hmmm. . .I’ll have to try those!

Coconut Fudgsicles

2 1/4 cups unsweetened almond milk

1/2 cup cocoa powder

1/2 cup brown sugar

2 Tbsp corn syrup

1 tsp coconut extract

1/2 tsp salt

3 Tbsp shredded coconut

Whisk all ingredients together. Pour into popsicle molds and freeze until solid.

Unmold and enjoy! Makes 8-10 fudgsicles.
