I have a love hate relationship with the sweet potato. (Squash, too) I may have mentioned it already.

I am learning to like sweet potatoes. Tim’s a fan and I make them for him. They are VERY good for you. Super nutrient dense. So, I decided I could learn to like them.

Granola Bars

Happy Labor Day! We partied yesterday. . today I lay low! Maybe make some more of these!

Remember how I told you about my granola addiction? This falls into the same category. It’s sticky, chewy granola. But in bar form.

I’m pretty sure these are a little like crack.  (Not that I’d know what that is like, of course!) You know. .they’re addicting. I feel a little like a dealer handing these out. Like a little free sample of granola bar to get ya hooked and then you’ll want more and more and I’ll start charging you more and more! BWA HA HA HA!

S’more Cookies

This weekend Tim and I rode our bikes about 30 miles. Not all in the same day, but half Saturday and half Sunday. The weather was lovely and finally warm again! Thank goodness, cause I was scared winter was bearing down on us already. All that riding gives me license to do things like sit around and eat Chinese take out or have pancakes!

Our Sunday ride was planned out to culminate in breakfast at our halfway point. We headed into an area of town called “Old Town” with a location in mind. Turns out they roll the sidewalks up in Old Town on Sundays. Only one place was open and although it is delicious, they also have huge waits to get a table most mornings and we were looking for a little bit more instant gratification so we headed into downtown looking for an alternative. Little did we know we were doomed to wait.

Sugar Free Chocolate Cheesecake

Confession time. I don’t like cheesecake. It’s yucky.

Let that sink in a minute.

I know, I know. The horror! I just find it too. . . .rich, cream cheesy, dense, cloying. I could go on. Something about cream cheese in sweet stuff that I can’t get behind. Occasionally I run into a cream cheesy dessert or pastry that’s edible but usually not. (Actually there is one cheesecake I did like and I had it years ago. It was a pumpkin version that my girlfriend, R, made. And surprisingly, she doesn’t like cheesecake either!)

Cinnamon White Chocolate (or Butterscotch) Cookies

It’s a good thing these cookies have already been distributed and eaten. If they were still in my house right now I would eat them all. I’m stressed.

Sometimes stress makes me eat. (Not always. . depends on the type of stress, actually.) Right now my stress is over my pup, Murfee, and her being inconsolable after having knee surgery a few days ago.

Couscous, Chick Pea and Basil Salad

We have a large garden at one of the local community gardens this summer. We have everything from basil to tomatoes growing. Everything is getting huge and already producing quite a crop.

The swiss chard is already out of control, as are the cucumbers, basil, peppers, mint, lettuce, radishes, etc. I have started utilizing some of the garden loot. This salad makes good use of my favorite. . .fresh basil.

Tropical Chia Pudding

Ever had a Chia Pet? I think I had a Scooby Doo Chia Pet years and years ago. At the time I never would have assumed the seed filled gel I was spreading on the tetta cotta character was good to eat! I just knew it grew a very nice grassy Scooby head.

Chia may be a bit of an acquired taste, although I liked chia seeds from the beginning. I toss it in yogurt, oatmeal, smoothies, etc.
