St. Patty’s Day Vanilla Mint Cupcakes

It’s almost St. Patrick’s Day. A good holiday to eat a lot or possibly drink a lot. I can’t say that I hit the green beer and Guinness these days but I do sometimes enjoy an Irish coffee and some corned beef and cabbage.

It’s Shamrock Shake season.  Several years ago Tim and I were feeling nostalgic for the minty shake we enjoyed when we were younger and we stopped at McD’s to get a couple. It had been a long time since either of us had had one.  What a let down! They were nowhere near as minty as we remembered and were too airy and foamy. What a bummer.

Vanilla Buttermilk Cupcakes with Cherry Buttercream

It’s my SIL’s birthday today so I made her these delicious cupcakes. Gotta fatten her up! (Just teasing, T!) Happy Birthday! Can you feel the love?

I stuck to regular sized cupcakes instead of jumbo ones for this batch. That makes them ‘light’ cupcakes, right?

Rainbow Cookies

This one is for my friend, Brenda, who told me she can not find these at any bakery near her and she misses them. They are a favorite of hers and this is my first go at them.

These are an Italian cookie and therefore are supposed to be colored like the Italian flag. I am not Italian. I was thinking these would be fun to do in different colors sometime. Like 3 different shades of blue or pink and red. Purists may disagree.

Breakfast Summer Rolls

It’s winter. I know this because we finally got some snow here in MI. It was lovely and now we can move on to summer. Spring is nice too but some summer heat is welcome now.

If I can’t have summer heat then I’ll make do with summer rolls. They are crisp and fresh and very adaptable.

These aren’t hard to make. HOWEVER, they will take you some time to put together. There are sort of a lot of steps here. . .ok not sort of. . . there are absolutely a lot of steps involved in making these. They are not speedy. But they aren’t hard. . .I know you can do it!

Baked Banana Pineapple Oatmeal

Back to oatmeal today. I do love the oats.

When I made this the first time it was not delicious. I had the wrong proportion or something and I was not impressed. I tweaked the recipe and came up with this version which was yummy so I thought I would share it with you.

Breakfast Parfait

Now what should you do with the granola you made yesterday? Besides pour a big bowl, slop on some almond milk and dig in? How about a parfait. You know I love the Greek yogurt.

Raspberries and blackberries are super yummy in yogurt. And once you add a little crunch from the granola. . mmmm. Yum. These are the breakfasts that make me the very happiest!

Chocolate Spice Valentine’s Day Decorated Cookies

Ok. . .a tiny, chocolatey, Valentine’s break from breakfast. . .although these would make a wonderful breakfast. These cookies are fantastic.

Once you add the frosting they are near to perfection. Iced sugar cookies are nice. . iced chocolate sugar cookies are THE BEST.
