Lentil and Cauliflower Curry

I love lentils.

Love is a word I use a lot on this blog. That makes sense I suppose, since I am sharing favorite recipes. Don’t think I love it all though. I don’t love everything. It’s likely I will never write about black licorice, okra, duck, blood sausage, raisins, oysters, or liver. Just so we’re clear.

Cauliflower is so versatile. It’s a low calorie filler that helps make this dish very hearty. And tasty, of course.

Homemade Cherry Chip Layer Cake

We celebrated a birthday around here this weekend. Happy Birthday, Timmy! Don’t mind the fact that the cake is pink. He likes it!

Cherry chip cake was the order of the day. It was delicious. I’m pretty sure that by now all of it is gone. It was 3 layers and easily fed about 10 of us with a full 1/4 of the cake left. It went home with the birthday boy.

Strawberry Covered Chocolate Cupcakes

How about some pretty, spring-y cupcakes. All my flowers are blooming so it seems appropriate! These would be perfect for a spring birthday party.

Don’t be intimidated by my awesome flowers and bees. I can be sort of awesome. If you can’t fathom taking the time to decorate your cupcakes like these, they will taste just as good if you just slather the icing on with a spatula. Or just eat spoonfuls of the icing and forget about the cake all together.

Chocolate Almond Butter Cup

Easter is this weekend. I don’t generally get into Easter. . .except I do love the candy. . .oh yea, and I enjoy making up Easter baskets.

I don’t do a lot of baking for Easter or make a ham. You know what I do? I eat Cadbury Eggs. And I go to brunch at my Aunt’s and eat quiche and cinnamon rolls.

Limeade Cake

Last week was my Grandma’s 86th birthday. (That’s right, Grandma, I just shared your age with the world!) I made her this cake.

She’s a citrus girl. Originally this was going to be lemonade flavor for her but limeade is the what I remember drinking at her house as a kid so it seemed fitting to go with that flavor instead.

Cappuccino Cupcake Cones

I love these. I love the cones acting as the cupcake wrappers.

Plus, they bring back nice memories of my childhood and my mom. And, since today is my brother’s birthday I thought it was a perfect time for some reminiscing.

Momofuku Crack Pie

Sometimes you hear a lot of hype about a particular recipe. You read about it on a million blogs and cooking sites, etc. And then, finally,  you know you have top try it and see if it lives up to its name and the word on the internet. You don’t really believe it could be that wonderful. And then it is!

This is that recipe. . . . and trust me. . . it’s AMAZING!

It’s so good I just wanna roll in it! (Which is also the canine equivalent of saying, “This is AWESOME”.)

It’s so good I want to eat 4 pieces at one sitting, even though it’s so sweet I know that would create the need for an instant root canal.

Biscoff Blondies

Biscoff is a thick butter of sorts that is made out of ground spice cookies. It is about the same consistency as peanut butter but tastes like a yummy spice cookie.

I usually just eat it by the spoonful but I decided to try baking with it. Let me tell you, it was a good idea! Biscoff is the brand name and you can find it in bigger grocery store these days. (Look by the peanut butter.) I used Trader Joe’s brand and it is delicious.

Iced Whole Wheat Sugar Cookie Bars for St. Patty’s Day

These have NOTHING to do with St. P Day. They are not Irish. They do not contain potato. (or cabbage)

But. . .they are green. Good enough for me. Sometimes simplicity is best! Besides, imagine how well a nice soft sugar cookie would absorb all that green beer you’re going to drink.
