Between all our hiking, backpacking. camping, paddleboarding & hammock drinking adventures this summer I didn’t spend much time baking. I know, it’s shocking. Who knew I was more of an outdoors girl? It would have been a great summer for baking because the weather never got very hot so having the oven on wouldn’t have been torture. Chocolate Chip Peanut Butter Oatmeal Cookie Bars
Whew! That’s a long name! Let me know if you come up with anything better. Something short and sweet like Happy Bars or Yummylicious Cookies.
Peanut butter and chocolate are classic. And a favorite of mine.
Biscoff Blondies
Biscoff is a thick butter of sorts that is made out of ground spice cookies. It is about the same consistency as peanut butter but tastes like a yummy spice cookie.
I usually just eat it by the spoonful but I decided to try baking with it. Let me tell you, it was a good idea! Biscoff is the brand name and you can find it in bigger grocery store these days. (Look by the peanut butter.) I used Trader Joe’s brand and it is delicious.
