Peanut Butter Energy Bites

So, Tim and I are soon going to be hiking/backpacking/camping experts. Actually with the amount of reading Tim has been doing I’m pretty sure he already is an expert even though we haven’t had a chance to practice much.Peanut Butter Energy Bites

Midnight Mocha Cookies

Happy Halloween! I’ve been keeping it tasty at our house with some Halloween themed cookies, among other things. These cookies are super dark, like midnight. Thus. my name for them. This is just a variation on a chocolate spice roll out cookie I make but it’s so tasty with the addition of espresso powder I figured I should share.Midnight Mocha CookiesYou certainly don’t have to be as elaborate with your cookie decorating. You know how I get. You could slather on some sort of icing though because these are not that sweet on their own. Peach Fritters

OK, it’s a little past peach season. Not that you can’t still get some good peaches but they won’t be at the peak of their sweetness. Fortunately, these are fried (or maybe unfortunately for my jeans) and the peaches will taste delicious in this yummy fritter batter regardless of the lateness of the season.Fritter loveIt’s sort of an unspoken quest for Tim and I to try to find the most delicious apple fritter possible. Tim has a ‘thing’ for the apple fritter and I may lean toward other morning pastries but I still can appreciate a crispy bite of fritter perfection. I wait all year for apples to be in season. Michigan apple season means a vast selection of apples to choose from and because our state is a huge apple producer, it means usually you can get many pounds for not many dollars.
