Maple Chicken Sausage

Happy Leap Day! Is this a celebration holiday? Maybe not, unless you have a birthday today.

But it is the end of February. . which means that (for the time being) breakfast food blogging is over. We’ll have a quick word on sausage and move on to some desserts next week!

Breakfast Summer Rolls

It’s winter. I know this because we finally got some snow here in MI. It was lovely and now we can move on to summer. Spring is nice too but some summer heat is welcome now.

If I can’t have summer heat then I’ll make do with summer rolls. They are crisp and fresh and very adaptable.

These aren’t hard to make. HOWEVER, they will take you some time to put together. There are sort of a lot of steps here. . .ok not sort of. . . there are absolutely a lot of steps involved in making these. They are not speedy. But they aren’t hard. . .I know you can do it!

Baked Banana Pineapple Oatmeal

Back to oatmeal today. I do love the oats.

When I made this the first time it was not delicious. I had the wrong proportion or something and I was not impressed. I tweaked the recipe and came up with this version which was yummy so I thought I would share it with you.

Breakfast Parfait

Now what should you do with the granola you made yesterday? Besides pour a big bowl, slop on some almond milk and dig in? How about a parfait. You know I love the Greek yogurt.

Valentine’s Chocolate Cinnamon Almond Biscotti

Guess what? You’ve got less than a week to Valentine’s Day. (And these biscotti will keep until then even if you make them right this second. They are like the cracker of the cookie world.)

I used to work in the holiday/gift “industry”. ┬áV-day was our biggest holiday and by now I would have been up to my eyeballs in pink and red hearts, ribbons, vases, etc. I do not miss the frenzy. Working all night, being too busy to even drink a few gulps of water, fielding last minute dudes who forgot the holiday until that very second, and once I was even seriously hard-core cussed out by some lady who was pissed I could not break a $100 bill for a $6 sale. People are nuts!

For years it was an unheard of luxury for me to actually celebrate vday. I was too exhausted, hungry, annoyed by crazy people, etc.

These days I get to celebrate as I choose. As leisurely as I want. It might mean making chocolate biscotti to share with a loved one. (It always means making a chocolate cake for my dad.)
