Key Lime Pie Daiquiri

Guess what? I’m on my way to somewhere tropical. Somewhere warmer than 5 degrees. Somewhere I will likely drink rum. Not to rub it in, of course.Key Lime PieTim and I are heading toward sun and sand to celebrate our 5th wedding anniversary, Thanksgiving, and to generally warm up again before we hunker in at home to brave the cold north. In honor of our tropical getaway and to toast 5 fantastic years of wedded bliss, I made a Key Lime Pie Daiquiri. Read the rest of this entry

Buttercup Squash Pound Cake

I guess I’ve dragged my feet long enough on fall baking. I miss fresh tomatoes, basil, cucumbers & zucchini already. And warmth, I miss warmth. I’ve already seen the first flurries of snow here in MI and I am not impressed.Buttercup Squash Pound CakeI do love fall squash though. A new phenomenon for me and now that I love it, I love it all the way. I’m mostly an all or nothing sort of girl in the food department. Read the rest of this entry

Peanut Butter S’more Bars

Peanut butter with my s’mores? Yes, Please. In cookie bar form? Abso-freaking-lutely! Pb s'more cookie barsBetween all our hiking, backpacking. camping, paddleboarding & hammock drinking adventures this summer I didn’t spend much time baking. I know, it’s shocking. Who knew I was more of an outdoors girl? It would have been a great summer for baking because the weather never got very hot so having the oven on wouldn’t have been torture. But that also mean it has been a great summer to lay in a hammock and drink wine. Soooooo. . . . . you know. Read the rest of this entry

Chocolate Covered Cherry Chip Cake

I want to revisit cherry chip cake. I haven’t made it in a few months but I am wishing for a big slice right now. Cherry season is over but this recipe only relies on maraschino cherries from a jar and they are ALWAYS in season in my world.Chocolate Covered CherryThis is a simplified version of my other cherry chip cake recipe. With the addition of the chocolate icing it mimics a chocolate covered cherry. Yummy! Need some now!

Aside from “needing” a large slice of cake right now, I have another issue in my house. Fruit flies. I have an infestation! Read the rest of this entry

Banana Peanut Butter Popsicles

Where has my summer gone? I can’t believe it’s August. I’ve barely even shared with you this summer. Recipes or stories about how I am an outdoors woman now!Banana Peanut Butter PopsiclesIt’s true. I’ve lived in the woods and survived without running/potable water, refrigeration, toilets, etc. Just us, some dehydrated food, a water filter and a shovel.  Ok, and a few comforts such as a tent, hammock, comfy little chairs and some wine. Of course, I didn’t have popsicles but I survived with out homemade treats for 4 whole days. Read the rest of this entry

Peach Mango Basil Popsicles

Popsicles are one of those simple pleasures that I remember from my childhood with fondness but rarely have in my freezer these days. They are exceedingly easy to make in a dizzying variety of flavors. Plus, instead of being glorified frozen sugar you can use REAL fruit or REAL coffee or REAL ingredients in general. Much more refreshing on a hot summer day.Peach Mango Basil PopsiclesMy favorite popsicles, by the way, were those ones that are in little plastic sleeves. In particular, Otter Pop brand, blue raspberry flavor, please! I love these homemade popsicles but I’m still not going to turn down an Otter Pop. (PS-I also find otters adorable!) Spinach, Lentil Salad

It’s summer! I only want to eat salad & ice cream. And maybe some popsicles. And I want to fry in the sun like pork skin!!!Spinach & Lentil Salad

It’s been a while since I last shared a recipe with you. I needed a month off. We have been MUCHO busy with sanding, staining & putting new railings on our deck, birthday parties, adding a retaining wall and landscaping to our front yard, perennial gardening, having house guests, having a garage sale, getting a large veggie garden planted, graduation & open house & all that is involved with that (step-son), etc. I’ve had little time or desire to bake unless it was for open house prep or a birthday treat. (Lots of June birthdays in my world.) Read the rest of this entry
