Dark Chocolate Chip Cookies

I suppose it’s because Thanksgiving was so late in the year. It leaves so much less time for holiday baking. Thank goodness my Christmas cards are done and most of my shopping is done.

Let the cookie making begin! How about a classic? Chocolate Chip.

Giant!Except, in the interest of keeping it different, let’s make them GIANT cookies. And let’s use dark chocolate chips. This recipe only makes 18 cookies if you make them as large as I did. Or, if you need smaller (regular size) cookies you could get 36 cookies out of it with no problem but you’ll have to back off the bake time by about 6 minutes.

These cookies stay nice and soft and chewy. They usually get eaten pretty fast and make a nice addition to a holiday cookie tray. Plus, they are easy and can be made in one bowl. What a relief when the other holiday treats on your list are more labor intensive.

Now that I’ve gotten one batch of cookies under my belt, I guess it’s time to get the rest of my self-imposed holiday baking done! What are you baking?

Chewy Giant Dark Chocolate Chip Cookies

2 sticks butter (1 cup), room temp

3/4 cup sugar

3/4 cup brown sugar

2 eggs

1 tsp vanilla

2 1/2 cup flour

1 tsp baking soda

1 tsp salt

1 bag dark chocolate chips (12 oz)

Preheat oven to 350 degrees. This makes 18 large cookies.

In a large mixing bowl beat the butter and sugars together until light and creamy. Add the eggs and vanilla. Mix well. Add the flour, baking soda and salt. Mix until combined and stir in the chocolate chips.

Scoop by 2 oz disher or large 2 Tbsp scoops onto a parchment lined baking sheet. I got about 6 cookies to a baking sheet. Bake 18 minutes. Remove from oven and cool.
