These are currently one of my favorite cookies. I first saw this brilliant idea on a brilliant blog that I enjoy, Picky Palate which is written by Jenny Flake. She just wrote her first cookbook and I can’t wait to get a look at it!
This is my riff on her idea. The original on her site is awesome. I’ve made them numerous times!
Caramel is one of Tim’s favorite flavors. We keep squeezable caramel in the house for our coffee and if offered chocolate, vanilla or caramel flavored anything he will choose caramel every time. So with that in mind I decided these cookies would be wonderful filled with caramel. The best way to do that? Bake a Rolo candy into the middle of each cookie.
(Because making homemade caramel is tedious and hard!)
The Rolo worked like a charm. The cookies came out gooey and glorious while still warm and chewy and soft after they cool. I prefer a chewy cookie most of the time so that worked for me.
Tim calls these the cannibals of the cookie world because the real trick to the creamy goodness of these cookies is that you use finely ground chocolate sandwich cookies (like Oreos) as part of your dry ingredients.
Cookies in cookies. Cannibals! Delicious ones.
These cookies will beckon to you. You will not want to share them. I didn’t want to share, but I did. Which is good because I do not need to eat 3 dozen cookies. That’s more of a want than a need.
That said, I wanted no-bake cookies today. So, I just made some of the most delicious no-bakes ever about 30 minutes ago and I have already eaten 2 of them even though they are not set up. I fear I will be eating a lot more in the very near future. They are so good. The recipe needs just a tiny bit of tweaking and then I promise to share them with you soon!
Caramel Filled Chocolate Cream Cookies
2 sticks butter, room temp
1 cup sugar
3/4 cup brown sugar
2 large eggs
1 Tbsp vanilla extract
1 3/4 cup flour
1 tsp baking soda
1 tsp salt
1 cup cocoa powder
15 whole chocolate sandwich cookies, finely ground
1 cup mini chocolate chips
36 Rolos, unwrapped
Cream together the butter and sugars until light and fluffy. Add the eggs and vanilla. Mix well.
Add the flour, baking soda, salt, cocoa powder, finely ground sandwich cookies. Mix well. Stir in the chocolate chips.
Take a small ball of cookie dough (about a Tbsp) and press an unwrapped Rolo into the center. Seal the Rolo up in the dough. Place on a parchment lined cookie sheet. Repeat until all the dough is gone.
Bake at 350 degrees for 10-12 minutes. Cool on a wire rack.
Makes about 3 dozen cookies.
